Roast Pork Chops with Smothered Apples

  • 1/2 tablespoon butter
  • 4 large, tart apples, such as McIntosh, peeled, cored and sliced
  • 4 pork chops, about 3/4 inch thick
  • 1 tablespoon chopped fresh sage, or 1 teaspoon dried
  • 1 tablespoon chopped fresh thyme, or 1 teaspoon dried
  • Freshly ground black pepper
  • 1/2 cup apple cider with no preservatives

Preheat oven to 400 degrees F. Spread the butter on the bottom of a medium-size roasting pan or ovenproof skillet. Arrange the apples in the bottom, layering as needed. Place the pork chops directly on top of the
apples, sprinkle with half of the herbs and a generous grinding of pepper,
Pour the cider on top. Roast the chops for 15 minutes. Turn the chops
over and sprinkle with the remaining herbs. Roast another 15 minutes.
Preheat the broiler and broil chops until well browned, 8 to 10 minutes.
Makes 2 to 4 servings.
