Tuesday Try A New Taste – Dandelion Muffins

Dandelion Muffins
Recipe taken from Native Harvests (author unknown)
and The Dandelion Celebration by Peter Gail


  • 2 c flour
  • 2 t baking powder
  • 1/2 t salt
  • 1/2 c dandelion flower petals
  • 1/4 c vegetable oil
  • 1/4 c honey
  • 1 beaten egg
  • 1 1/2 c milk

Combine flour, baking powder, salt & flower petals. In separate bowl, combine oil, honey, egg & milk. Mix liquids with dry ingredients, stir just to moisten. Spoon into oiled muffin tins and bake in a 400 degree oven for 20-25 minutes.
